The poussin is a young chicken from the label family. In some regions of Spain, it is also traditionally known as pollo tomatero. In other parts of Europe it is known as coquelet, though it tends to weigh slightly more, usually 500 gr or above.
The meat of the poussin is particularly tender as it is very young and light in weight when eaten. It is high in proteins and has a low fat content.
It is excellent when grilled, seasoned with aromatic herbs, and adapts very well to all kinds of roasts and stuffings.
